Mark Pawlowski, CEC, Certified Executive Chef at the Yorktowne Hotel, won the title of "Iron Chef Pennsylvania" at the first-ever Pennsylvania Food & Beverage Conference held at the Hilton Harrisburg recently. Pawlowski and his team competed against 15 other chefs and their teams from throughout the region. They had two hours to prepare a three-course meal consisting of appetizers, entrees and dessert for 12 judges. The chefs received a partial food list to plan their meals ahead of time, but the secret ingredient was whatever meats the chefs were able to retrieve from a refrigerator that was opened at the start of the contest. Pawlowski has received numerous awards in culinary competitions. Before moving to York, he served as executive sous chef at the Enchantment Resort in Sedona, AZ.
